For a bento box : Recipe N°36

The famous French pear tart with its caramelized top.



Ingredients :

  • 3 eggs
  • 80 g sugar
  • 60 g almond powder
  • 70 g soft butter
  • 1 can of pear in syrup
  • 15 g slivered almonds
  • Sweet dough:
  • 250 g flour
  • 125 g soft butter
  • 1 egg
  • 80 g sugar
  • 1 pinch of salt

Preparation :


  1. For the shortbread dough: put the flour, salt and butter in small pieces in a bowl. Crumble with your fingertips. In another bowl, beat the sugar and egg until the mixture turns white. Mix the two preparations. Knead lightly and make a ball.
  2. Let it rest 30 min in the refrigerator in plastic film before using it.
  3. For the garnish: in a bowl, mix the eggs and sugar with a spatula. Add the almond powder and melted butter.
  4. Do not whisk too much so as not to incorporate air.
  5. Preheat the oven to 180°C.
  6. Roll out the dough and make a 26 cm diameter pie tin. Prick the bottom with a fork.
  7. Arrange each half pear cut into strips on the bottom of the tart. Pour the preparation and sprinkle with slivered almonds.
  8. Bake for about 30 minutes.
  9. Put the slices in your bento.
