For a Bento Box Recipe N°4

 

Ingredients :

 

  • 1 egg
  • 1/4 yellow pepper
  • 1/4 red pepper
  • 50 g courgette
  • cumin
  • 35 g of semolina
  • ¼ red pepper (30 g)
  • 35 g cucumber
  • 1 tomato
  • 1/2 lemon
  • 2 tablespoons chopped parsley
  • 1 tablespoon of olive oil

 

Preparation :

1. Dice the pepper and cut the zucchini into half slices.
2. Cook the diced pepper with 5 cl of water in a frying pan over high heat until evaporated.
3. Then add the courgettes and cook for about 5 minutes.
4. Whisk the egg with salt, pepper and cumin and add the vegetables.
5. Pour the mixture into a small oiled mould (crème brulée or tartlet mould, about 12 cm in diameter) and cook for about 10 minutes at 200°C. Leave to cool.
6. Dice the pepper, half the tomato and the cucumber.
7. Pour them over the semolina with the juice of half a lemon, oil and parsley.
8. Season and leave to stand for at least 2 hours until the semolina absorbs the juice from the vegetables.
9. Decorate with the remaining half tomato.
